Although Kasey won't remember it I am so glad she is here watching her Uncle Joey head undefeated into the College World Series Championship game!
We are having a lot of fun down here with Pop pop and Uncle Joey and excited for the rest of the Wendle's to head here on Saturday!
Mostly Kasey, not at all entertained by baseball, practices her standing! What a fun thing to learn while we live in North Carolina this week!

Pretty pretty princess

She is sitting up great now, crawling well and obsessed with pulling herself up to stand

Baseball + Healthy-ish Raisin Walnut Coffee Cake Muffins
Last night the baby was sick, just for a few hours, and it was so sad, poor princess. Makes you feel terrible. Luckily she was all better just a few hours later. Maybe she decided to get sick to get out of Andy's baseball game, she probably figured she would be heading to a lot this coming long weekend...
Tonight we head halfway to North Carolina for the College World Series! We are so excited to watch Uncle Joey play there! (Thanks Mom and Dad Wendle for taking us along)

I decided to make a healthy snack for our trip and have been seeing lots of recipes for coffee cake muffins, which sound delicious! I decided to go with a healthy base, plus I had some home made baby food (ie. pear sauce and a little sweet potato puree) to use up before we left. I used this as my idea base for the muffin and this crumb topping recipe.
Walnut-Raisin Muffin
1 cup rolled oats (not instant)
1 cup reduced-fat milk, I used 2%
1/2 cup home made baby food - mostly pear sauce + a little sweet potato puree - could sub applesauce
1 egg
1/2 cup whole wheat flour
1 tsp. baking powder
1/2 tsp. espresso powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup golden raisins
1/2 cup almond flour
1/2 cup dark brown sugar
1/2 cup walnuts
Topping
3 Tablespoons cold, unsalted butter, cut into cubes
1/2 cup flour of choice, I used 1/4 cup almond flour + 1/2 cup whole wheat flour
3 1/2 tablespoons sugar, I mixed light brown sugar with regular granulated
1/2 teaspoons ground cinnamon
1. Soak the oats in milk for approximately 1 hour.
2. Preheat the oven to 350 degrees. Spray a muffin pan with non-stick cooking spray.
3. Combine the oat mixture with baby food/applesauce and egg, and mix until combined.
4. In a separate bowl whisk together dry ingredients.
5. Add wet ingredients to dry ingredients and mix until just combined.
6. Add nuts or raisins, stir in.
7. Put about 2 tablespoons in 12 sprayed muffin tins
8. Make topping: combine all ingredients by hand
9. Sprinkle on top of each muffin
10. Bake at 375 for 25-30 minutes

Finally got it down
After I posted yesterday Kasey got crawling down and is sitting better, these are the earliest videos of it, but she has since gotten better...
Once she got better she moved on to pulling herself up, because really who wants to crawl when you just might be able to walk...
