skillet cookie

On Thursday Kasey and I made Uncle Joey a birthday cake...
She is not the most helpful sous chef at this age because she grabs at everything and knocks stuff over...

We made a "Skillet Cookie Cake" which is super easy and fun. Plus you only dirty one pan - the skillet! We made the recipe from The Wicked Noodle blog but since I didn't have

toffee, I wish I did, I used butterscotch chips. It looked and smelled so good we had to eat some before getting it to Uncle Joey - woops...

Hospital visit and trying to crawl

Kasey's EKG and echo cardio gram went great here are some of our pictures while waiting...
We head back Wednesday to finish up and soon enough you will no longer see her hemangioma!






 She also is determined to crawl...so far she doesn't quite ...

Hot Pink/Red (+ a little aqua)


I love Kasey's Hot pink bow-tutu outfit, thanks Ker!



Red superfood salad:

Red leaf lettuce
Handful halved red grapes
4-6 dried mission figs, halved
Handful blackberries, 6-8
Goat cheese, about 1oz, crumbled
Walnuts, 8-12
Dried cranberries, tablespoon or 2
Grapefruit segments and/or beets (optional)
Balsamic vinegar, drizzled
Olive oil, drizzled



Off to the hospital today to get some tests done for Kasey's medicine to heal her lip (hemangioma)!
A little of today's aqua outfits too

rolling and a cup of coffee cake

Good morning!
Okay so I am trying to eat healthy - which is obviously back firing and so this morning I made
A cup of Coffee Cake -Microwave Coffee Cake for one!
It was delicious. I followed the recipe almost to a "t" - (only subbing a little almond meal and whole wheat flour for some of the all-purpose)

 Kasey can move around like crazy on the floor - I think she may start crawling backward soon...we will see...

Camera DL, Perfect Granola, G. Mornin

I have become obsessed with granola and make it almost weekly. We made it again yesterday and I think I have perfected my granola so here is the recipe. Obviously everything is optional and can get changed up. I eat it like cereal for breakfast every day with Almond milk.

Nutty-Coconut Apricot Granola


2 cups rolled oats
1/2 cup ground flaxseed
1/4 cup honey
1/4 cup e.v.o.o.
1 tablespoon coconut oil, or peanut oil, or if necessary olive oil ( + extra to drizzle)
1 tablespoon maple syrup or blue agave syrup, ( + extra to drizzle)
1/2 teaspoon salt
1 teaspoon cinnamon


1/4 cup raw almonds
1/4 cup raw walnuts
1/4 cup raw sunflower seeds
1/4 cup raw pumpkin seeds
1/4 cup unsweetened shredded coconut
1/4 cup sweetened shredded coconut


1/4 cup unsalted, roasted almond slivers
1/4 cup roasted, lightly salted peanuts
1/2 cup chopped dried apricots
1/4 cup golden raisins
1/4 cup roasted pistachios




Preheat over to 300
Combine 1st group of ingredients
Spread on pan and put in over 30-35 minutes, until lightly toasted
Stir in 2nd group of ingredients
Drizzle with maple syrup (honey or agave) and oil (olive, coconut, or other)
Put back in oven 10-15 minutes, until toasted
Take out of oven and add last/3rd group of ingredients
Let cool


Serve over yogurt or in milk or just eat by hand
