Quintessential Summer Quiche

Kasey and I made a Quintessential Summer Quiche yesterday

We love our tomatos and zucchini in the summer.
Used our regular quiche recipe
In stead of heavy cream, we just used 2% milk because that is all we had
And we used 1 zucchini,chopped and sautéed, and about a pint of cherry tomatos, halved and slightly roasted
Instead of 8 oz of cheese we just used 4 oz of goat cheese, since it has a stronger flavor, but if you don't like goat cheese use 4-8oz mozzi, swiss, gruyere, ricotta, muenster, whatever you like...





This seems to be my 100th post - which is more than I thought I would ever have when I started this....
Although this blog came out much different than I imagined - mostly just pictures and some recipes to celebrate Kasey - I am happy to know if anything happened to me, Kasey would have these memories, this bit of her mothers personality and of course some recipes I have used to keep with her.

This past week I got the opportunity to work a lot ( 25 hours!), thanks Mom and job, and although I love my job and it feels good to go in to work for a day and help students, I missed my time at home with Kasey. I am so lucky to get to do both in moderation...next week I work only 12 hours and then after that my official schedule for 2 months is only 4 hours a week (not counting cheerleading). I can't imagine missing our days together and my time with this sweet sweet baby girl:
