the end of fall

so I have been slacking with my pictures...

we went to the Nova - UD tailgate the weekend before Thanksgiving (day before Kasey's party)











and on Thanksgiving Kasey and I met Granny at Longwood gardens



















also we have been baking and cooking a lot but I want to remember this recipe:


My Pumpkin Bread Recipe (Cranberries optional), based from this Real Simple recipe

INGREDIENTS

  • 1 1/2 cups (200g) flour, mix of whole wheat and white
  • 1/2 teaspoon of salt
  • 1 cup (200 g) sugar, 1/2 cup brown, 1/2 cup granulated white
  • 1 teaspoon baking soda
  • 1  and 1/4 cup + 1 tablespoon (240 ml) pumpkin purée*
  • 1/4 cup (120 ml) olive oil or coconut oil
  • 1 egg, beaten
  • 1/4 cup orange juice
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1/2-1 cup (120 ml) cranberries
* To make pumpkin purée, cut a pumpkin in half, scoop out the seeds and stringy stuff, lie face down on a foil or Silpat lined baking sheet. Bake at 350°F until soft, about 45 min to an hour. Cool, scoop out the flesh. Freeze whatever you don't use for future use. Or, if you are working with pumpkin pieces, roast or boil them until tender, then remove and discard the skin.
Mix all together
Bake at 350 about 1 hour, until toothpick comes out clean
