my ham & blueberry oat muffins

Another beautiful day!

By 11:30am we felt very relaxed and accomplished: Kasey and I took Annie to the dog park for about a half an hour and took about a 20 minute super quick run. We also baked some delicious Blueberry Oat Muffins. I made my own recipe based off of two recipes ideas (one, two).





I figured we could bring a bunch of muffins on the bus as a healthy snack for me and the team. And leave some for Andy, since I haven't left him much other food to eat this weekend, oops.





Blueberry Oat Muffins



12oz or 2 plus cups blueberries
1 2/3 cups oat flour
1 1/3cup flour
1 cup white wheat flour
3 eggs
1 ripe banana
1 stick butter, melted and cooled slightly
1/2 cup applesauce
4 teaspoons baking powder
1 teaspoon salt
1 3/4 cups sugar
1 teaspoon vanilla extract


Mix all wet I gradients in one bowl
Mix all dry ingredients in one bowl
Mix drying. Into wet 
Mix in blueberries, I floured the blueberries first but everything still turned blue...


Turbino sugar and oats to top


Makes about 36 muffins
Bake in preheated oven, 375 for 25 minutes

By now, a little before 6pm, we feel rushed and like we have been running like mad: We went to Babies R Us, hate that store, got lost on the way to one park, finally made it to meet some people - total waste of time...so to make up for it we headed to meet some mom/baby combos to walk at a different park and then a friend at a different park... And dropped Annie off and picked her up from her "friends" house so she could run off energy before we left. Boiled some eggs, making a nicoise salad for dinner and figured that would be something else for Andy to eat this weekend. Did laundry for the 3rd time in 2 days, packed a little for Kasey, packed a little for me, have a lot more to pack...




Also realized Kasey understands the camera - she smiles and totally hams it up every time it comes into view... Try taking a picture of this crying, screaming child and she stops and smiles just as the flash goes off... I am raising a monster! It doesn't help that I take pictures of her like it is my job, uploaded about 70 yesterday and added almost 90 more today...woops. That is something that should get better when I go back to work...




Kasey and I will probably be a little busy this next week, with VT and then starting work so our next post may take awhile, but I promise to take a billion pictures of this little girl growing and add them ASAP.
