fall and some pumpkin recipes

We just love the fall weather, minus the baby never ending runny nose...

We decided to start our fall off right with pumpkin granola and some pumpkin muffins, yum!
For the granola we basically followed this recipe, we used sunflower seeds instead of pepitas, and walnuts instead of almonds, we subbed extra craisins and raisins in (all after baking though - don't won't burnt dried fruit).

Since we opened a can of 15oz pumpkin we had some left over, so we made muffins, we halved this recipe except I always screw up and forget to half things so then I stray entirely:

Pumpkin Muffins
1 3/4 cups all purpose flour, we used 3/4 cups whole wheat
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
2 teaspoons pumpkin pie spice
1/3 cup oil (vegetable, coconut, olive, a mix)
2/3 cups sugar
2 eggs
1/2 teaspoon vanilla
1 cup pumpkin puree
1/3 cup water, was thinking I could cut some sugar next time and replace some of this with honey, agave or maple syrup
1-2 tablespoons malple syrup




Combine dry ingredients
Combine wet ingredients
Stir to combine

Makes 12 muffins

We baked 6 right up and then added 2/3 cup of chocolate chips to the rest of the batter and froze the batter in muffin tins so they will be ready to pop in the oven whenever we want
Baked 20 minutes at 325 F
