silly girl/morning glory muffins

Kasey has been feeling a little under the weather lately - she is still a doll during the day, although you can tell she is a little off - but her nights are a mess

Poor girl...

Here is one of her new "talents" though:




We adapted this muffin recipe earlier this week and really enjoyed these muffins, very healthy

Whole Grain Morning Glory Muffins

Makes 18 standard-size muffins
1 1/2 cups whole wheat flour
1/2 cup all-purpose flour
1/4 cup ground flaxseed
3/4 cup plus extra for sprinkling sugar
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon table salt
1 teaspoon pumpkin pie spice
1 large carrots, peeled and grated (about 1/2 cup)
1 small tart apple, peeled, cored, and grated
1 cup crushed pineapple, drained
1/2 cup chopped walnuts or pecans
1/2 cup dried cranberries or raisins, or mix
2 large eggs
2 ripe bananas, mashed
1/4 cup olive oil
2 tablespoons molasses
2 teaspoons pure vanilla extract
Preheat the oven to 350°F. Lightly grease 18-standard size muffin cups or fill with liners and lightly grease.
Combine all wet ingredients
Combine all dry ingredients
Mix
Add in dried cranberries/raisins and walnuts
Sprinkle a little cinnamon -sugar over each muffin

Bake 25 minutes
