Eat your veggies

I am not a huge fan of any of the grocery stores near my house. I know you think they are just grocery stores - who cares - but really they are all just "okay." This sucks for someone so into food and cooking. We do have a Trader Joe's across the street- which I love but Trader Joe's doesn't carry everything and they also can be expensive if you need to buy in bulk. I am excited they are building a Whole Foods nearby but that has been going on forever and I am not sure when we will actually be allowed inside.
This lack of a good grocery store usually leads me to do multiple shopping trips - only hitting a real grocery store every few weeks and TJs and Target for everything else. It's pretty complicated actually.
Today Kasey and I went grocery shopping at the nearby Acme and at Target - we loaded up on fresh veggies which we haven't had in the house a while because of this deficiency.





I was inspired to make a quiche, really to use up the rest of the egg whites and half and half, so we made an Asparagus quiche - based off my mom's quiche recipe:
1 pre-maid pie shell
4 eggs (we used 2 eggs and 1/3+ cups egg whites)
1/2 pint heavy cream (we used 1 cup+ half and half)
1 cup cheese ( a few handfuls mozzi and colby jack)
salt, pepper, tabasco, worchesterine, any other seasonings (I like paprika, habenero flakes, garlic, and pepper)
any add ins (veggies/bacon/etc...) (asparagus cut small in this case)



We baked it at 350 for 45 minutes, or until the center comes out clean when you put a knife in.

I also have been watching too much daytime television - thank you The Chew and The Revolution - and decided to see what the hype was about with these "green shakes."
My green shake consisted of: 1 golden delicious apple, 2 handfuls spinach, 1 handful kale, 2 stalks of celery, the rest of my cucumber (about 1/4th of a medium size cucumber,) a splash of water, a splash of oj, a splash of apple cider vinegar, and the juice of 1 lemon)
It tastes fine I guess...edible... but not enjoyable and I like to enjoy my food...

Why do people do this? Why not just eat vegetables in your regular meals? I love spinach on pizza, in pasta, as a salad base, on egg sandwiches. Kale is good in soup. I eat about 2 apples a day already - they are great alone or with cheese. Cucumber salad is a fave in this house - just sliced cucumbers and season salt. I feel like it is so unhealthy to have to feel you have to put all these veggies in a blender and force them down. It reminds me of the mom-friendly cookbook by Jessica Seinfield Deceptively Delicious, http://www.doitdelicious.com/cookbooks/deceptively_delicious/. My friend got me the cookbook a while ago, everyone knew I always wanted to be a mommy, and although I liked the ideas of using mashed bananas and sweet potatos in foods to add healthy sweetness I hate the idea of hiding the veggies! I want Kasey to eat her veggies and enjoy them - part of the reason I drank carrot juice when I was pregnant- I read in a study that preggo moms who drank carrot juice had children who enjoyed carrots. I think it is funny that Mrs. Obama and the nation discuss getting kids to eat more veggies and like them - but apparently adults should just juice 'em all together and shove it down. Really bad parenting if you ask me - kids need to see you enjoying the veggies!

Luckily this Sunday for pizza making Kasey will see me enjoying my veggies! Some tomato sauce and sauteed mushrooms on my pizza. We are currently cooking both in preparation - with vino of course - got to get some grapes in our diet!
