So we have been busy once again. We had a wonderful weekend! Andy didn't have anything this Saturday so he had baby duty and they came to the senior game to watch the team! It was great to have Andy at the game and to show off the baby! She even wear the Cabrini onesie the cheerleaders got her!
Since my double headers didn't start until the early afternoon we got a leisurely Saturday morning go ether- with snow! We made pancakes, I used this recipe -http://www.thekitchn.com/the-best-pancakes-ever-134328 - and changed it a little to have some white whole wheat, as well as chocolate chips. Andy is also great for helping with baby-food photo ops.

Got home around 6:30 on Saturday night and got to have dinner together- love family meals! I had bought a bag of kale, for my green shake, and had heard of kale chips so I thought we would give them a try - addictive. I made the whole bag and we scarfed them down! I made them by drizzling on some olive oil, sprinkling on some sea salt, garlic powder and red pepper flakes for 10-20 minutes at 350, the crispier the better!

Also, since I have a major sweet tooth I made these 1 minute chocolate cakes, http://chocolatecoveredkatie.com/2012/01/19/single-serving-mocha-chocolate-cake/, as the base of our ice cream sundaes, both Friday and Saturday! I double the recipe for Andy and i although i think splitting it would be fine. I use coconut oil, espresso powder, almond milk, and 1 tablespoon less sugar. Delicious. It is too bad it is so easy, I will definitely make this way too often. Ate it too quickly to take any pictures and it was after Kasey went to bed anyway.
Yesterday a bunch of my friends came over - for Kasey's first "girls only" valentine celebration! We had way too much food but it was all very yummy! I made 2 types of pizza dough, the honey whole wheat from the other night and a regular kind, where I subbed in 1 and a half cups white whole wheat flour. This made 2 huge pizzas which we didn't even finish... And then I made two huge strombolis with the leftovers! Andy's had ricotta, mozzi, sauce and pepperoni, while mine has spinach, mushrooms, ricotta, mozzi and sauce. Dinner for Wednesday is ready!

Tomorrow is Kasey's first valentines day and Andy will be gone about 16 hours, or longer than Kasey's whole day, so we are going to have a girls only baking day! And wear pink or red! Very exciting!
